Crunchy, tangy cole slaw is a go-to side dish for so many summer meals.
About 6 cups shredded cabbage
1/2 purple onion, sliced
1 apple, peeled, cored and sliced
Dressing:1/2 cup plain Greek non-fat yogurt
1/4 cup good real mayonnaise
1/4 cup seasoned rice vinegar
2 tsp dried dill weed
dash red pepper flakes
In a large bowl, whisk together the dressing ingredients. Add the cabbage, onion and apple. Toss to mix well.
Serves 4 as a side dish.
